Newly Diagnosed Diabetic Dog...please Help!!

My 13 year old westie Millie has been diagnosed with diabetes this morning and has been started on insulin injections. We usually feed her normal food such as chicken, rice, potatoes etc instead of dog food. The vet mentioned that there are special diabetic diets we can put her on but if possible we would prefer to keep her on normal food. Can anyone advise me on the best types of things to be feeding her at mealtimes to assist us in manging her diabetes?
