Anyone any mussel recepies?

We often have mussels when we eat out but have little idea how to cook or what sauce recipies to use can anyone help please?

I cook them in white wine, after you`ve washed & cleaned em well put in largish pan sprinkle with finely chopped/crushed garlic enough white wine to cover the botton/half glass full approx, bring to boil with tight fitting lid & simmer till they open You can remove them & add cream to the cooking liquid or leave it as it is

This recipe comes from one of the top seafood restaurants in Auckland NZ called Harbourside - their food is divine...


Here you go:

HARBOURSIDE'S
MUSSEL CHOWDER

Serves 4

Brought to you by -
Phil Spathis

Ingredients:

1 carrot (diced)
1 onion (diced)

(1) 2 celery stalks (diced)
½ cup frozen corn
60gm butter

(2) 500 gm flour
Dash of sherry (optional)
Pinch of thyme

(3) 1 ½ kg fresh mussels
1 glass white wine
2 medium potatoes, diced, par-boiled

(4) Salt and pepper
900 ml fish stock

(5) 100 ml cream
1 tbsp. chopped parsley


Method:

Steam mussels in white wine, reserve liquid, de-shell and chop mussels, reserving 2 mussels per portion for garnish (3).

Place diced vegetables with butter (1) in medium sized pot. Cook lightly for 3-4 minutes.

Add flour and cook for a further 2 minutes, rest 5 minutes. Add sherry and thyme (2).

Gradually add fish stock, (4) and white wine from steamed mussels. Season. When boiling, add chopped mussels and potatoes. Return to boil.

Finish with cream and chopped parsley (5). Garnish with reserved steamed mussels.
