Oh no, me cake's gorn flat!

I make a delicious chocolate sponge - usually - and being diabetic, decided to try and make it with Candarel instead of sugar.

Disaster.....

Gawd knows what it tastes like.....

Anyone got any low/no sugar cake recipes I can filch please?

I use Splenda, and theres a good recipe for blueberry muffins on the packs at the mo.

Here's another one for you to try, its fat and sugar free...

FAT FREE/SUGAR FREE FRUIT CAKE
Ingredients:
12oz dried fruit (raisins, cherries, figs etc)
2 cups self-raising flour
1 cup Canderel or similar sugar replacement
1 cup of cold tea (use a normal tea bag and a fruit tea bag for extra flavour)
2 egg whites
1 teaspoon mixed spice
2 teaspoons cinnamon

Grated rind of orange and lemon (optional)
Teaspoon vanilla essence (optional)
3 tablespoons ground almonds (optional)
Honey to drizzle (optional)
Method:
1. Soak the fruit in cold tea overnight.

2. Preheat oven to 190°C/350°F. Grease a loaf tin, then line with greaseproof paper so as not to get any oil in cake mixture. Leave enough paper around the edges to be able to cover top of cake too.

3. Blend ALL the ingredients (except the ground almonds and honey, if using) with fruit & tea.
Pour mixture into loaf tin. Sprinkle the top of the cake with ground almonds and drizzle with honey, if using.

4. Cover the top of cake with greaseproof paper and place in the oven for 90 minutes. Uncover the top of cake for last 20-30 minutes. Leave the cake to cool in the tin before removing.

I luuuuurve Thorntons chocolates I've had the low calorie stuff, and to be honest, it's sh*te
