For me, it's maple syrup poured over whilst I'm still doing t'other side in the pan, so it gets nice and warm, then slid onto a plate, lemon juice all over the syrup, then rolled, not folded, more lemon juice on top and a sprinkling of caster (not normal sugar but can't remember the word!!!) and then a big dollop of ice cream by the side, mmmmmmmm, I'm off to make mine now!! Sorry if that's too much information but you did ask!!!
