Fried Haloumi Sandwiches
While we're on the subject of haloumi, which, in case anybody's wondering is a kind of Cypriot cheese normally made from ewes milk, but a lot less sheepy than you might expect, otherwise I wouldn't eat it... It's lower in fat than most hard cheeses, and therefore has different melting properties, ie: it doesn't really, which makes it good for frying, grilling, griddling or, my favourite, barbecueing.
It seems that lots of vegetarians suffer the lack of bacon sandwiches. This has never created any sense of loss in me, as I never really liked pork anyway. Anyway, if you were a vegetarian looking for an alternative, I think this would be it...
French stick, cut into a sandwich-length piece
Mayonaise
Sliced tomato
Crispy lettuce
Haloumi, prepped and fried as in previous recipe
Don't worry, I'm not going to try to tell you how to make a sandwich
