Had a few ripe bananas.....

so I experimented.

Banana muffin anyone?







I love baking, but very rarely get time to do it.

Now I am on a diet (a bummer when I'm baking lol) but I have just tried one, for quality control purposes
and they are yummy, not too sweet either.

Recipe..

2 large bananas, mashed
75 g soft brown sugar
4 tbsp sunflower oil
1 size 3 egg
125 ml milk
200 g self-raising flour
½ tsp nutmeg, grated

Method
  1. Preheat oven to Gas 5, 190C, 375F.
  2. Mix mashed bananas together with the sugar and oil.
  3. Beat in egg and milk.
  4. Fold in flour and nutmeg.
  5. Spoon into non-stick muffin tins and bake for 15 - 20 minutes. Should make 12 muffins.
It's a tesco recipe, nice and simple.
They are supposed to have 141 calories each.
I doubled the amount as had 4 large bananas, but I don't think they'll last long.
