Guacamole...

Has anyone got a good recipe for making a nice guacamole please?

I've made it a couple of times buts it's never quite right.

2 avocados - peeled, stones removed and chopped
1 small red onion, finely chopped
1 clove garlic, minced
1 ripe tomato, chopped
1 lime, juiced
salt and freshly ground black pepper to taste

Preparation method

1. Mash avocados in a medium serving bowl. Stir in onion, garlic, tomato and lime juice. Season with salt and pepper to taste

Or

2 plum tomatoes, chopped and seeded
1 red pepper, seeded and diced
small onion, finely chopped
1 red chilli, seeded and finely chopped
1 garlic clove, crushed
2 tbsp chopped fresh coriander
pinch of salt
150g natural low-fat yoghurt
150g soured cream
2 large ripe avocados
2 tbsp lime juice

Serve with tortilla chips

Method

1. Combine the tomatoes, pepper, onion, chilli, garlic and coriander in a large bowl and season with a pinch of salt.
2. Mix together the yoghurt and soured cream. Halve, stone and peel the avocados. Mash with a potato masher or large fork until almost smooth, but still a little chunky. Sprinkle with the lime juice to prevent the avocado from discolouring, then stir into the yoghurt mixture.
3. Quickly fold in the tomato mixture. Keep covered with cling film until ready to serve

Or

Ingredients

1 large ripe avocado, stoned and mashed
2 tomatoes, chopped
grated zest and juice of 1 lime
2 spring onions, chopped
1 garlic clove, crushed
1 tbsp chopped fresh coriander

Preparation method

1. Combine all the ingredients together shortly before serving. (Add ½ fresh green chilli, deseeded and finely chopped or a dash of Tabasco for a spicy kick.)

lol i just use the powder with an avocado added. tastes very nice and spicy

Have tried this one, got it from a Mexican (no joke) and its good -
I avacado - chopped
1 tomato - chopped
1 red onion - chopped
olive oil
1 chilli - chopped
bunch of coriander - chopped
salt and pepper
Lime juice to taste
