Do you use wine in your cooking much?

If so which dishes? And do you notice much difference if you omit the wine?

No, but I have a sign in my kitchen which says
"I like cooking with wine, sometimes I even put it in the food"

I did try a beef and ale stew once. Don't know what I did wrong but it was disgusting.

I do use it in sauces and stews to richen them.

I tend to drink more when I'm cooking though

Yes I use it a lot and it make a big difference to the flavour of dishes .
It is wise to cook out the alcohol though or you can get a harsh flavour .

Do you notice much difference if you don't use it? In one of my gravy recipes the difference is night and day (to me anyway).

I've done that a few times (not cook it out properly) and I've also forgotten to take the pan of the heat before adding it

My intention is to cook with wine if its in a recipe but most times it gets drunk instead.

Joking aside yes sometimes I do and it does make a richer sauce or gravy.

Totally agree - any stew or casserole in particular is greatly enhanced with wine. Sometimes I add some of my home made sloe gin to a stew, and it's fab!!

Red and white wine, Madeira wine, sherry and cider are frequently used.

My favourites are Somerset Pork which is cooked in cider and chicken in a creamy white wine and tarragon sauce.

I too like pork in cider Jeltz

I used to have but lost a very old recipe for a honeycomb pudding using eggs/madeira/sugar/gelatine but I can't remember the recipe.

It separated out to give a jelly layer at the bottom with a mousse on top and was light and delicious and a good ' food for invalids' as they used to say .

I make a lovely roasted vegetable lasagne which is all the better for the inclusion of white wine, it really does make all the difference to the tomato sauce element..

A family favourite is steak, mushroom and red wine pie
