I built some raised beds a few years ago in my garden and (even though I say it myself) I'm really pleased with them. I bought a couple of tons of reclaimed stone setts (squarish blocks of stone about 6-9 inches square)and used them to make curved terraces retaining the soil as my garden has a 3-foot level change right in the middle. I've let them get very overgrown over the years but the stones have stayed in place even though I didn't use any mortar. Because of their shape the setts are very stable and strong and hold soil well. I'd definitely use them again, and it's a good way to make your garden look more rustic than red brick does.
If you're interested I'll take a picture of them when it's daylight and post on here.
