I boil mine for 10 mins then leave them for a few minutes to 'dry off' while the fat is heating up in the oven. I then toss them around in seasoned flour (with a bit of garlic powder) to fluff them up, then put them into the hot fat. I use goose fat to roast them in.......yummy


Sweep, I've used duck fat in the past, and they've come out just as nice
