urgent help needed with menu!

Having a pretty important dinner party on Saturday evening - and need help sharpish. One of the party can have no wheat or dairy produce - and another member of the party is a vegetarian. So we're stuck basically - we were thinking of making two main meals - enchiladas both - as we are fairly accomplished at making them - one with meat, one without. However we are thoroughly stuck on dessert or starters... can someone help!?! lol

We need a simple, effective starter, free from meat products, dairy and wheat.

Fish for starters - scallops, prawns, smoked salmon - if the veg. eats fish? If not, fruit - melon, pears, strawberries with a balsamic dressing, etc. A light veggie soup, hot or chilled.

Dessert simple - poached pears, easy and looks good

Isn't wheat flour used in enchiladas?

yes... I'm hoping we can get our hands on wheat free tortillas... we can hope - if not back to the drawing board.

Poached pears is an idea - and yes, veggie does eat fish - so maybe smoked salmon with pumpernickel and salad?

Sounds good A tiny bit of horseradish (if not made with cream) would be nice with smoked salmon. Or, my preference, capers - yum
