Freshly grated parmesan cheese. Something I picked up in the States - would never have thought of it myself - and it's great on a plain salad

Apart from the usual toasted nuts and seeds, olives etc, I usually add fresh corriander leaves.

Combinations of assorted salad leaves (rocket, spinach, watercress, cabbage, lettuces, etc.), chopped cucumber, tomato, carrot, red/orange peppers, olives, grilled mushrooms, grilled peppers, grilled aubergine, cooked asparagus, chicken or fish seasoning, lemon juice. Feta cheese is lovely too!

Served with grilled chicken (with jerk chicken seasoning), grilled tuna, tinned tuna, grilled salmon or smoked salmon or anything really.

Hungry now!

Or put in a hot, crusty, granary baguette.
