This a favorite of mine... no name that I'm aware of so we'll call it "Popeye Salmon" ........

Sorry don't have quantities coz I just cook by eye so it'll depend on the size of the fish and ofcourse the size of your appetite

Lay a sheet of puff pastry on the work surface. Place the salmon onto that, season then cover with a layer of spinach (as thick as the salmon) Fold over the pastry and nip down the edges to form a pie. Bake until the pastry is a nice golden brown....

Empty a tub of single cream into a bowl. Chop up some apple into small cubes. Finally chop some leek and add that with the apple to the cream. This salad goes really well with the salmon...

Tofu and Noodle soup

1 packet of firm tofu
1 lime
veggie stock (I like the marigold bouillon vegan version)
tamari (a special kind of soy sauce, look in the oragnic section of the supermarket or ask in any health-food shop)
lemongrass
root ginger
garlic
red chillies
packet mangetout/sugarsnap peas, halved
0.3-0.5 savoy cabbage, shredded
2 large carrots, cut into matchsticks
****ake mushrooms (if you like that kind of thing. I don't!)
2 blocks fine egg noodles
fresh coriander

Cut the tofu into chunks, grate the zest of the lime over it, squeeze the lime juice on too, then add a liberal dose of tamari (at least 2-3 tablespoons, that stuff is delicious!), give it a quick mix, hands are best, and leave to marinate for a good bit while you get on with the rest.

nb. If you wanted to add a little toasted sesame oil to the mixture it wouldn't hurt, but isn't really necessary. Just keep it too about 1 tsp, otherwise you won't be able to taste the rest!

Bash a couple of lemongrass stalks with something like a pestle or the end of a rolling pin. (I actually use the handle of my knife, but my husband can't watch in case I lose my fingers, so I'm not going to recommend that!) Same treatment to 2 or 3 whole red chillies and 3 cloves of garlic. Cut 2 or 3 10p shaped slices ginger, peel, and add them with all the bashed stuff to 2 pints of veggie stock in your biggest saucepan. Simmer it all together for about an hour, then fish all the bits out with a slotted spoon and get rid of them.

Carrots, mangetout and tofu (with any extra marinade) in now (and mushrooms if you're using them) and simmer for 10 minutes. Cabbage and noodles in together and simmer until the noodles are cooked. If you like your cabbage well cooked you might want to put it in a little before the noodles, but it might be a recipe for wind!

Finally stir in a good handful of finely chopped fresh coriander just before you serve it.

nb. If you were feeding vegans you wouldn't want to use egg noodles, and you can get other types. I think japanese rice noodles are OK, but you'd need to check. Just watch out for the ones that are made with palm oil. Vegan they might be, but they also contain a staggering amount of fat compared to the egg ones. Palm oil plantations are also decimating the forests of Borneo, the last remaining habitat of the Orang-Utan.

Ciabatta with cheese and tomatoes

dice some Feta ( or buy it ready diced )
Chop cherry Tomatoes in half
Chop a red onion
Chuck in a bowl with some Olive oil , S & P
add some fesh basil

Slice the Ciabatta in half and toast it ,then top it with the cheese tomatoe mix and put back under the grill till done ..Yummy

I love cooking and creating recipies, so here's one of my favourites. It was a real hit at our last dinner party. It could also be done as a main, either with salad or fresh spring vegies. Here it's presented as an entree.

Lobster Stuffed Mushrooms
(Created by Trev)

Serves 4
Ingredients:
8 Large mushrooms
¼ cup Parmesan cheese
2 cloves of garlic – minced
¼ tsp. black pepper
½ tsp. salt
1 tbsp. olive oil
½ cup bread crumbs
1 tsp Italian herbs
¼ cup Lobster meat – chopped
2 tbsp. of mayonnaise
olive oil – for brushing

Directions:
-Remove stems from mushrooms. Set aside caps; chop stems.
-Combine all ingredients, except mushroom caps.
-Spoon mixture unto mushroom caps.
-Arrange mushrooms, filling side up, in shallow baking dish.
-Brush each mushroom with olive oil.
-Bake in 160 degree oven for 25 minutes.

Notes:
-Can be made in advance, then reheated in oven until warm.
-Sprinkle a little tasty cheddar on top prior to re-heating
-Serve on a small bed of jasmine rice.

Easy, healthy patties:

Any veg of your choice
eg any, all or a combination of veg such as cooked lentils, butternut squash, parsnips, carrot, onion, etc.

Cooked meat/fish - optional
Stock or canned tomatoes - optional
Tomato puree - optional
Herbs - optional
Garlic - optional

Teeny bit of olive oil of having onions but agan can leave out

Mashed potato - ordinary or sweet potato

Bread crumbs - eg wholemeal

This is so easy you can mix and match and adjust to suit your taste.

Fry onion in olive oil
Add desired veg
Add water and/or stock/or chopped tomato
Herbs/garlic to taste - if adding
Meat/fish if adding

Cook, add puree if having

Make mashed spud and add to cooked stuff

Add breadcrumbs as necessary to make firmish mixture - shape into rounds and place on baking tray

Cook in oven until firm on outside.

Serve with mixed salad.

Lemon juice dressing or whatever you like

Salmon on Lemon Rice

Easy peasy,

Boiled rice added to:

Chopped carrot and chopped orange pepper mixture - cooked until soft in water, herbs of your choice

(Can cook in olive oil first if you want)

Add lemon juice and cook a teeny bit more.

Stick a tin of canned salmon OR a fillet of cooked salmon on top. Or any fish for that matter.

Salmon and noodles

Salmon fillet
Spray oil
Stir fry veg (tesco's do a good one)
soy sauce
medium egg noodles

Steam cook salmon (about 10-12 mins) then add it to a wok with the oil, and stir fry veg. In the meantime cook the noodles according to packet instructions. Drain and add to the salmon and veg and mix together. Add soya suace to your liking and serve immediatly

Chicken breast with tomato sauce (serves 1)

Chicken breast fillet
Small can of tomatoes
small clove of garlic (crushed or very finely chopped)
1/4 onion, finely chopped
Spray olive oil

Grill or steam chicken breast until cooked through. Meanwhile fry onions until transparent then add crushed garlic. Add tomatoes and heat through.

Place chicken breast on a plate and pour over tomato sauce. Serve with boiled potatoes and veg or pasta
