Its difficult not knowing what cosmo's strengths are (apart from mud diving)

some obvious ones:
bow
spin
beg
play dead
roll over

If he likes retrieving you could teach him the name of various toys, line them up and get him to bring you the ones you name.
Oo I like the lining up the toy idea.
He can already do roll over and left and right spins. He's a big dog so I don't want to teach him to 'beg' (Plus there is something about it I just don't like you know....)
I do like the retrieving different toys though....he sort of does it now. Wondering how I could make it look more spectacular!

I taught Biff and Mo to count, Morris was fab and would bark everytime I lifted my eye slightly in the end...but I suffered because Biff liked to practice!!!!! I think Cosmo would be like Biff.

I am thinking there will be lots of amazing tricks too, so my competitive urge is sneaking in!!!
Hmmm...maybe something with his retrieve then.

I think I have time to teach something quite complex as he LOVES clicker training and picks things up in no time at all. I had to teach a right spin for agility this week, he had a solid left spin already (I taught him when I was learning to use the clicker so he's been doing it for ages). Anyway, it took less than 30 seconds for him to learn a right spin...and a whole minute to learn it with a cue word,2 days later it is solid as he was twirling all the way down our street yesterday on the way home from a walk! So complex will be fine I think...I just am clueless about what sort of thing I could do you know...because I have been teaching practical stuff for so long!(Not that you can tell with their behaviour mind.....)

Another cute one is bow, or crawl backwards.
He can almost bow now, his bum tends to collapse though!Again I sort of half taught him when I was learning to mark behaviours with the clicker!

crawl backwards, then roll over, then cover the nose, no idea if it is appropriate but sounds kinda cool.

If it is in the indoor riding schoolit might be dramatic to do something with jumps---maybe a jump over his back.

Easy to teach with your help and then change the command to your son and start moving away.

Don't do it indoors though cause of the landings and his legs.
