How did it teach the dog that?
At the point the dog was hit, it was offering calming signals,licking it's lips and looking away from the chicken. How did it teach the dog not to chase chickens. The dog wasn't chasing a chicken at the time. The dog was lying near the chicken doing nothing. When CM moves his hand, the dog looks away and licks it's lips and CM makes that bizarre noise and hits it.
As far as I can see the dog has learned either that CM is pretty scary and hurts him whenever he moves his hand OR that humans around chickens are something to be feared (but if they are not there they are probably fair game) or that humans don't listen to calming signals so they need a stronger message that you are not happy with the situation, like a bite perhaps...OR all of the above.

That dog is owned by the man who wrote and owned "Marley" the Labrador, thats his new dog "Grace" I believe. The full episode is available online somewhere I think.
