Last night's beef effort was utterly delish, and as Baz will be late home, I've thrown together a chicken one this morning comprising of:
2 chicken breasts cut into bite-sized pieces
sliced red, green and yellow peppers
mushrooms
onions
tin of chopped tomatoes
1/2 pint chicken stock
lots of salt and pepper

If this one is as good as the beef one, Ill be extremely happy!

currently Tesco has a slow cooker on sale for under a tenner.. probably cheaper than ebay, given the postage is going to be high.

PORK CHOP - POTATO BAKE
6 pork chops
6 potatoes, sliced or quartered
1 can mushroom soup
1 lg. can milk
Mix soup and milk together. Brown pork chops in Dutch oven.
Put potatoes on top of pork chops. Pour soup over top. Bake 1 hour at 400 degrees.

BANANA BREAD
2 eggs
1 1/4 c. mashed bananas (about 3)
1 c. sugar
1/2 tsp. salt
1 tsp. soda
1/2 c. melted shortening or margarine
2 c. flour
1/2 c. nuts
12-inch Dutch oven. Preheat oven to 350 degrees. Mash bananas first,
then add all other ingredients. Bake 45 minutes to 1 hour.
(To cook outdoors on campfire, put 10 coals on top of Dutch oven 8 coals on bottom. This equals 350 degrees.)

SPICED FRUIT COBBLER
4 cans or 1 qt. fruit
1 tsp. nutmeg
1 tsp. cinnamon
2 tbsp. sugar
1 pkg. white cake mix
1 1/2 c. water
2 eggs
Place drained fruit slices in bottom of Dutch oven.
Sprinkle with spices and sugar. Blend cake mix, water and eggs.
Pour over fruit mixture. Cover and cook 25-35 minutes at 350 degrees.

EGG CHILI PUFF
10 eggs
1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 pt. cottage cheese
1 lb. shredded Jack cheese
1/2 c. melted butter
2 (4 oz.) cans diced green chilies
(12 inch Dutch oven) Preheat oven to 350 degrees. Beat eggs until light. Sift together flour, baking powder, and salt. Add to eggs. Add cottage cheese, Jack cheese and melted butter. Stir in chilies. Pour into greased Dutch oven. Bake for 35-45 minutes or until the top is golden brown and center is firm. Serve hot for breakfast, lunch or dinner.

KENNEDY STEW
5-7 potatoes, sliced small (not thin), uncooked
1 lb. hamburger
1 can peas with juice
4 carrots, uncooked
1 can cream of mushroom soup
1 can cream of celery1 sm. onion
1 tsp. salt
1 tsp. pepper
Preheat oven to 375 degrees. Brown hamburger and onions. In a 1 1/2-quart oven-proof dish add all ingredients and mix well. Put in oven 1 hour 15 minutes.

GOULASH
1 lb. lean ground beef
1 med. onion1 c. elbow macaroni
1 qt. whole tomatoes1 tsp. salt
1/4 tsp. pepper Brown
ground beef in heavy skillet. Add onion, salt and pepper, tomatoes. Bring to a boil. Add macaroni. Cover with tight lid; cook for 10 minutes. Chili powder may be used for seasoning if desired.

UPSIDE-DOWN TACOS
6 lb. ground beef
4 lg. onions, chopped
6 (15 oz.) cans chili beans
6 (10 oz.) cans enchilada sauce
Salt to taste
5 heads lettuce, coarsely chopped
1 (8 oz.) bottle commercial Italian salad dressing
6 bunches green onions, chopped
10 fresh tomatoes, chopped
2 lbs. shredded cheddar cheese
3 (7 oz.) pkgs. corn chips, crumbled Select a covered roasting pan with tight fitting cover.
Place meat in pan and cook, stirring, until it loses its redness. Add onions and cook. Add beans and enchilada sauce, rinsing each can with water and adding a little of the water to the pan. Bring to boil and add salt, about 2 teaspoons or more, to the taste. Cover roasting pan and simmer for about 1 or 2 hours. To assemble this dish, place lettuce in a large salad bowl and toss with dressing to coat each bite. Then place onions, tomatoes, cheese and chips on top. Enjoy! You can also let guests fix their own dish.

MINESTRONE SOUP
1 1/2 lb. shin beef with bone
1 qt. Water
1/2 c. dried red kidney beans
1 tbsp. Salt
1 tsp. Accent2 bay leaves
3/4 tsp. Tabasco
1 1/4 c. chopped parsley
1/2 c. diced celery
1 c. shredded cabbage
3 carrots
1 can tomatoes
1 lg. zucchini

AURORA'S HUNGARIAN GOULASH
Chopped green onions
1 red onion, chopped
1 bell pepper, chopped
1 lb. lean ground beef
1 can tomato paste
1 clove garlic, minced
3 tsp. chili seasoning or Hungarian paprika
1 (16 oz.) can diced tomatoes
1 (8 oz.) can tomato sauce
1 (7 oz.) pkg. rotini pasta
Saute onions and bell pepper in oil until tender. Add beef, garlic, chili seasoning or paprika. Cook until beef is browned. Add undrained tomatoes and sauce and add tomato paste to taste starting with half a can. Cook pasta, drain and add to mixture. Cook on medium-high heat 8-10 minutes. Serves 4-6.

CROCKPOT BEEF STEW
2 lbs. beef stew meat, cut into 1 inch pieces]
1/4 c. Flour
1/2 tsp. Pepper
1 tsp. Worcestershire sauce
1 bay leaf
3 potatoes, diced
1 stalk celery, sliced
1 1/2 tsp. Salt
1/2 c. beef broth
1 clove garlic
1 tsp. Paprika
2 onions, chopped
2 tsp. Kitchen Bouquet (optional)
Place meat in crock pot. Mix flour, salt, pepper and pour over meat. Stir to coat meat with flour. Add remaining ingredients and stir to mix well. Cover and cook on low for 10 to 12 hours or high for 4 to 6 hours. Stir stew thoroughly before serving

I do hot-pot in mine and it's gorgeous.

1lb Diced Lamb
6 slices Black Pudding
2 Onions
5 Potatoes (depends on size, just judge on amount of layers you have!!)
Block Feta Cheese
Fresh Rosemary about 4 sprigs
Worcestershire sauce (to add to boiling water)

Slice Potatoes up and slice onions and keep on separate plates.

Starting with potatoes, put alternate layers of potato, onions, lamb, feta and black pudding into the pot. Season each layer well with salt, pepper and chopped fresh rosemary.

Then top up hot pot with boiling water (with a couple of dashes of worcestershire sauce in) leaving about a 3inch clearance off the top of the pot, so it doesn't overboil.

I set mine off on high for about 3hrs, then turn to low until the liquid has thickened to form a nice gravy. It is even nicer the next day when the flavours get more pronounced

Another nice one is lamb stew...

1lb Diced Lamb
Stew pack from the co-op
(contains about 3 carrots, a turnip, parsnip, two onions)
4 Potatoes sliced evenly
2 Knorr Chicken stock cubes
Boiling water
Fresh rosemary
Salt & Pepper to taste

Dead easy - peel veg and chuck in. Dissolve 2 stock cubes in boiling water (about 1.5 pints), season with salt, pepper and chop in fresh rosemary.

I do mine on high for about 4-4.5hrs.
