my b/fs mum makes a stunning red cabbage!
she adds cooking apples (very small diced) and onions too.

she boils the cabbage (shredded) as you would normal cabbage,, adds the apples and onion then adds wine vinger and leaves to boil slow for about 2hrs, i can get more info if required..it really is yummy, served with red wine jus instead of gravy, im hungry now!

i text her, this is the recipe and amounts:

500g/1 lb 1oz red cabbage, core removed and the rest thinly sliced

1 medium onion, thinly sliced

250g cooking apples, peeled, cored and diced

1½ tbsp white wine vinegar

1½ tbsp muscovado sugar

¼ tsp mixed ground spices, such as cloves, nutmeg and
cinnamon

½ tsp salt

black pepper

15g butter

place all in a pot or casserole dish, cabbage first then the rest including all apples, onions and all spices sugar etc, leave to simmer on low for 2-3hrs or oven cook on gas mark 2 or 130-150c for 2-3hrs stirring once or twice....

she said better if u can do it in in the oven instead of a pot, but either work

xx

My step dad is Danish, and every christmas dinner without fail he makes the red cabbage. I don't eat it but my family love it.

Don't know how he makes it (thats really helpful isn't it ) but i know he adds Ribena!!!

Blooming wonderful Koda!
I made this for lunch today and it went down a treat! My son went back for seconds and thirds and then took what was left home in an empty margerine tub
I subsituted half the wine vinegar for red wine, not that I am an alchie or anything, but it was very nice indeed
