Carrot Cake??

Hi,

Has anyone got a good, simple carrot cake recipe they wouldn't mind sharing??

Its my Mum's birthday on Sunday and as i have a boring day in on Saturday waiting for her present to be delivered i thought i do some baking and make her favourite cake.

Butter for Greasing
4 1/2 oz self raising flour
pinch of salt
1tps ground cinnamon
4 1/2 oz soft brown sugar
2 eggs
3 1/2 fl oz sunflower oil
4 1/2 oz Carrots (peeled and grated)
1 oz walnuts & some halves for decoration

For the frosting
4 tbsps butter softened
1 3/4 oz full fat soft cheese
8 oz icing sugar (seived)
1 tbsp lemon juice
(line your tin)
Sieve the flour, salt and cinnamon into a large bowl and stir in brown sugar. add the eggs and oil to the dry ingreadiants amd mix well. stir in the carrots and walnuts
cook on 180/gas mark 4 for 20/25 mins, untill firm to the touch
leave to cool in the tin.

I also added some mixed peel on top!

Oooh that looks good!! Cheers for the recipe, I will give it a go!

I actually can't stand carrot cake and chocolate is more my speciality - making and eating!! But look forward to giving it a go.

It's been a while since me and my kitchen have had some proper quality time together as i'm cooking for one this week whilst OH is away and i hate cooking for one.

CARROT CAKE
(For Diabetics)

4 eggs
1 1/2 c. vegetable oil
3 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt

top. Bake in preheated 325 degrees oven for 40 to 45 minutes or until
done. Yields 32 slices. Exchanges: 1 slice equals 1/2 bread,
1/2 fruit, 1/2 vegetable and 2 fat. Calories: 1 slice equals
180.
Might be worth trying :P I have no idea what the 'c' means though!
