i always think its right to trust your instincts around trainers - if it doesn't fell right or your not comfortable with the advice, it's your dog and you must make your own mind up

vague statements like 'too much protein' wouldn't fill me with much confidence...how much is too much, how much should it be (and is the trainer selling their own food?)?

I read that he/she was trying to say there are two options. One would be to feed a large breed puppy kibble. The other option a normal puppy kibble for two months, followed by an adult food thereafter. I don't like to sound of the second suggestion personally.
