does anyone have a good recipe for venison

Dougie was given a load of venison yesterday when at work... the chap was very pleased with the job he had done so gave him a big bag of venison burgers/sausages... and a load of venison steaks...
the burgers and sausage are gone.... lol but Im not sure what to do with the steaks... my heads all numb at the moment

Anyone got some good ideas on cooking them?

I don't have any recipes as such, but as steaks, you can cook them pretty much as you would any other steak - pan fry or grill (pan fry may be better).

I've often seen it served with a fruit based sauce - blackberry; blackcurrant, redcurrant (or a mixture!).

Steak & chips
300g venison fillet cut into 2 steaks
A little olive oil
Freshly ground black pepper
Coarse sea salt
Serve with fat chips.

Method
Brush the venison fillets with the oil and season.

Fry in a hot pan for 3 minutes each side for rare steaks or until cooked to your liking.

Serve with chips and mayonnaise or redcurrant jelly.
If using mayo try adding a little bit of Tarragon o the mayo and mixing well --- mmmmm my teeth are watering just thinking about it

I tend to treat venison steak the same as a beef steak, if its come from an older beastie I tend to give it a good bashing first,if its loin steak it will just melt in your mouth

That's unfair - having to cook it and then not even being able to have some.

You could always blend your meal like baby food .
