I cannot get lamb shanks here but from posts on a Food Forum I belong to it appears that using a slow cooker is the best way to cook them.

If I can get onto that Forum from this computer I will see if I can get more details for you.

This is a combination of various tried and tested recipes:

Brown the the shanks off in a frying pan [not absolutely necessary - it seems to be a matter of choice, some do and some do not. I never brown any meat before putting it in a slow cooker - I am a "bung it all in together at the start" person!]

Sit the shanks upright if room, on on their sides if not, on a bed of whatever root vegetables you like.

Pour over a glass of red wine [and a table spoon of redcurrent jelly if you have it] - the wine can be substituted for white wine or chicken stock.

Season to taste - a couple of sprigs of rosemary go well.

Lid on and cook for ~4 hours on high, but preferably 8 hours on low. Actually you can leave it on low for longer than 8 hours.

The meat will no doubt be falling off the bone by then, so if you really want to have them whole it is suggested to lift the shanks out very carefully with a large slotted spoon!

General consensus is to serve with mashed or crushed potato to soak up the juices, and whatever vegetables you would normally have as sides.

Slow cooker definitely!! It's the only way to cook lamb shanks in my opinion!!

No no a thousand times no! Just about an inch's worth of liquid is all you need. Hence the "glass" of wine, or whatever liquid you are using.

I have cooked a whole chicken in one of my slow cookers [I have four ] and with that you do not need to add any water at all.

Not stupid at all - if you are new to slow cookers then how are you supposed to know?

I can recommend some excellent [and inexpensive] SC recipe books from Amazon if you would like.

I got my first SC over 30 years ago and it was still going strong when I replaced it about 12 years ago. I only replaced it as it did not have a removable crock insert and found one that did, and gave the original one to a friend.

As I said I now have four of them! One round 6 litre, which is the replacement one, an oval 6.5 litre, an oval 3.5 litre, and my latest is a round 1.5 litre.

Greedy? Moi?
