Make sure the tin is very, very hot before adding the batter and make sure you've whisked enough. Hot baking tin is key

I love yorkies with loads of gravy. Never managed decent homemade ones either. I too employ Aunt Bessie although I prefer the raw ones you (batter in tin foil!)) to the ready to heat ones. I always leave them in too long so they end up like paper weights!

It was in the oven for half an hour before I added the mix...

Well I only wanted to attempt them so I didn't have to spend money on 6 that wouldn't last me a few days, so I'll try the above recipe (Delia) and half cook some then put them in the freezer so I can heat them up when I need them
