Hi Annie I think the answer is not to cook the vegatables but to blanch for a moment in boiling water or to steam for a few moments..

I use many herbs,..sage and parsley are particularly good sage aids digestion, parsly is a mild diuretic and good for the kidneys..as with most things in moderation.

Yep, think you're right. That seems like the correct thing to do. You still get the "crunch" but the cellulose is broken down enough to be easily digested!!! Good thinking!!!
