For LU-1...
Egg-less Fruit Cake
200g mixed fruits
175g dried apricots, chopped
180ml water
2½ tbsp evaporated milk
75g castor sugar
75g soft brown sugar
180g butter
375g plain flour
1 tsp baking powder
1/2 tsp ground nutmeg
1 tsp cinnamon powder
Grease and line a 18 – 19 cm square cake tin. Preheat oven to 180°C.
Combine mixed fruits, chopped apricots, sugars, butter, water and evaporated milk in a non-stick saucepan. When it has just began to boil, reduce the heat and simmer gently for 2 – 3 minutes, stirring constantly to dissolve the sugars. Remove the saucepan from the heat and set aside to cool completely. Sift in flour, baking, cinnamon and nutmeg powder. Use a wooden spoon to stir well to combine. Turn mixture out into prepared cake tin and bake in preheated oven for 45 – 60 minutes or until cake is cooked through when tested with a wooden skewer. Remove cake out on to a wire rack to cool completely.
