I rarely come on here to look at posts other than doggy stuff... I really must venture into non dog related topics more often!
Here's Nigella Lawson's recipe for Carrot Cupcakes. They are lovely.
Carrot Cakes with Cream Cheese Icing
For the cupcakes
scant 1/2 cup of light brown sugar
3/4 cup of sunflower oil
2 large eggs
1 1/2 cups all-purpose flour
3/4 tsp baking soda
1 tsp cinnamon
pinch of salt
zest of 1/2 lemon
zest of 1/2 orange
2 medium carrots grated
scant 1/2 cup walnuts chopped
12-cup muffin pan lined with 12 cupcake cases
for the icing
1/2 cup philadelphia
1 2/3 cups icing sugar (confectioner's sugar), sieved
1-2 tsp of lime juice
12 walut halves
Preheat the oven to 400 F (205 c). Beat sugar and oil together (easier in a kitchenaid mixer), then add the eggs one at a time. Add flour, baking soda, cinnamon, salt and zests, then fold in carrots and chopped walnuts. Spoon into the cupcake cases in the muffin tin and bake for 20 mins (a little less if you want them very moist). Cool on a rack.
Wait until the cupcakes are cool before starting the icing - you need a light touch for this, I overdid it and ended up with slightly too gooey icing. By hand, soften up the cream cheese a little in a bowl with a wooden spoon. Beat in the icing sugar, then squeeze in the lime juice. Spread on the icing with a knife, and place a walnut half in the centre of each cupcake.
Here is Tessa Kiros' recipe from Falling Cloudberries. I haven't made this one myself, but hear that it is heaven on a plate.
Carrot Cake.
4 eggs
250gm caster sugar
185 ml sunflower oil
300gm plain flour
3/4 tsp salt
2 tsp baking powder
1 teaspoon bicarb
2 tsp ground cinnamon
400gm carrots (looks a lot)
55gm chopped walnuts
180gm butter ( unsalted i guess)
250gm icing sugar
180gm cream cheese
3 drops vanilla extract
Preheat oven to 180 oC.
Grease and flour a 24 cm springform tin.
Whisk eggs and sugar until creamy, then whisk in the oil.
Sift together flour, salt baking powder, bicarb and cinnamon. Add this to the eggs and whisk.
Add the carrots and nuts and mix together.
Scrape into tin and bake for an hour.
Once the cake has cooled;
For the icing whip the butter and icing sugar together until its stiff.
Beat in the cream cheese and vanilla.
Spread over the cake.
