Chocolate bread pudding with chocolate sauce
1/2 tsp of marg
6 slices of bread, crusts removed and cut into squares
1 pint of skimmed milk (You can use other types if you want)
2 tablespoons on unsweetened cocoa powder
2 eggs
25g (1 oz) of dark or light muscavado sugar
1 tsp of vanilla essence
1 tsp icing sugar to decorate
for the sauce
25g (1oz) plain chocolate (70% cocoa solids) broken into pieces
1 tablespoon of unsweetened cocoa powder
150ml (1/4) skimmed milk
1 tablespoon of cornflour
Sweetner/sugar to taste
Grease a 8 inch square baking dish with the marg and layer the bread squares into it. In a pan gently heat the milk and cocoa powder until lukewarm.
In a clean bowl, whisk eggs, sugar and vanilla essence together, then add warm milk and beat well. Strain into the baking dish, making sure all the bread is covered. Chill for 1-2 hours.
Preheat oven to Gas 4/180 C/fan oven 160 C. Bake the pudding for about 35-40 mins. Remove and set aside for 5 mins.
While the pudding is cooling, make the sauce. Out the chocolate, cocoa powder, milk and cornflour in a saucepan. Heat gently, stirring until smooth and blended. Add sweetner/sugar to taste.
Dust pudding with icing sugar and serve with the sauce.
