Help me to translate

Hello, I'm french and i have to translate texts about dogs (german shepherds). And i wondered if you could help me find the right expressions

I know "out" is the command given to the dog to release the grip. But what is the name of this command ? In french it's called 'cessation'. And a french guy told me that it's called 'call off' but i'm not sure...

Same problem when the dog guards the helper firmly without touching him. In french w say 'garde au ferme'. I've been that the english name is 'hold en bark' but I thought the 'H&B' not exactly that ...

I'm sure there expressions in english which designate those two terms

Hi, sorry, I don't know.

There is a member called 5dog who I think is a police dog handler. He may know, the trouble is I don't think he comes on that often, but you could try sending him a pm?
