Advice please!

I have bought a Butternut Squash today. I'm always behind the times when it comes to trying different things

So my question is what do I do with it now boil it? roast it ? and for how long

Peel , with a knife not peeler, cube it , wack in a pan with olive oil and sea salt and roast it. It takes about 30-40 mins, just keep prodding it, it is really sof when done.

I've never tried one but I believe it's along the same lines as a sweet potato. You can roast it or boil it. I think it takes around 15 mins to half an hour. Have it in with a load of roasted mediteranian veg, you know, peppers, red onion, mushrooms, sweet potato, cherry tomatos, put them all in an oven dish, salt, pepper, and drizzle with olive oil, put them in at 180 or 190 depending on whether you have a fan assisted oven or not (no idea if you have gas). And bake em for half an hour. Much yumness!

If you are roasting it I wouldn't go to the bother of peeling it beforehand, it comes off easier after.

Jamie Oliver has a lovely recipe for Butternut Squash and chestnut soup.

I do things like that..............buy something new then stare at it on my kitchen worktop, wondering what the hell to do with it ???
