Have to say I'd prefer a fairly easy dog.

Depends what you class as a challenge. I'd say my Estrelas are easy but I'm sure other people wouldn't view them that way.

I would go for an easy dog every time - I have had my fair share of difficut dogs and now I just want to enjoy my dogs and not worry about them.

I must be getting old

Ditto the above.
To be honest, something with long flowing locks that needed persistent grooming would be more challenging to me than anything with challenging behaviour. A grooming challenge would scare the hell outta me!
