I made a fab Lamb Rattatouille - it was supposed to last two sittings, but only lasted one, as we had second helpings and gave a portion to Jackie
It consists of:
Boned shoulder of lamb
Courgettes
Red and green pepper
Mushrooms
Onions
Aubergine
Lamb stock
Tin of tomatoes
Dried basil
New potatoes

It's so simple to make, and so gorgeous - a real winter warmer

Don't bother with a slow cooker. I do mine on the hob, that way I can brown the meat, and sweat off the onions, then add everything else, stick a lid on it, and voila - three hours later - a yummy stew!
