Depends on the variety of spud, new potatoes are best roast from raw, old potatoes are best par boiled and done with dripping, goose fat or similar (but I'm old fashioned).

auntie bessie does my roast 90% time 5% its a different make and the other 5% my mum makes from scratch
yorkshire are normally frozen ones

Make my own yorkshires as per Delia.

Always allow the mixture to get air I put it by the open window for half hour and keep whisking it up.

And salt makes them rise more....... [sorry Azz]

I'm a par boiler too (as well as an old boiler! Lol!), oven hot, fat hot, but I chuck lots of salt on them too after I've chucked them in and turned them over in the fat (that's very important to turn them before putting them back in oven and so is that salt!). Same with the chips, always salt over them before lowering them into the deep fat fryer, nice and crispy!

Par boil, drain, air dry, good spin in the saucepan to rough em up, then put in a roasting tray with spitting hot fat, lovely!!

Low fat roasties, Par boil potatoes then put a table spoon of oil into a plastic bag and add potatoes rub them around in the oil then put into preheated dish and bake for 30 minutes or so.
