Pork Chop Recipes

Can anyone help? I bought some cracking pork chops from a butchers whilst out on my travels recently. I went overboard, as usual, and bought £20 worth. I now have 24 pork chops, and the only thing I know what to do with them is grill them.

Anyone got any nice pork chop recipes they are willing to share?

Major fav in our house - works as well with gammon too....

4 pork chops / gammon steaks
2 leeks (sliced)
1/4 pint veg stock
1/4 pint double cream
4 oz mushrooms (I always use way more, but love mushrooms
2 oz cheddar cheese (or more!)

heat oven to 180. Seal meat in a little oil and saute(sp) for about 5 mins each side. Meanwhile, Melt a little butter (1 oz) in a different pan, throw in leeks for about 5 mins, stir in about 1/2 oz flour, add stock and cream and bring to boil. Stir in mushrooms and season with pepper and thyme.

Put meat in shallow dish and cover with sauce and sprinkle on cheese. Bake for 30 mins.

The amounts on ingredients are a little loose (open to interpretation!) as I never really weigh much out as a rule
