Sounds good to me
Im a veggie and love stuffed peppers, one of my fav stuffings is finely chopped mushrooms and onions cooked with garlic, and then mixed in with some wholegrain rice. but my absolute fav thing to do with peppers is put them on a skewer with mushrooms, cherry tomatoes, and my fav thing of all time Halloumi cheese, and pop them under the grill or on the BBQ.
Yummy Yummy! all this talk is making me hungry !

love italian food and chinese (although icant imagine cooking chinese food succesfully as were on electric oven and not gas hob - which is how to make good stir frys apparantly?)

we also got veg cous cous as thats what we have at work n it looks yummy!!!

1. Creamy vegetable Linguine?
2. Veggie lasagne?
3. Roast vegetable and halloumi salad? (sort of Italian)
4. Home made veggie pizza?
To be honest, even something as simple as pasta and tomato sauce (home made of course) still has a few of your five a day.

Another idea is to take on one of Adele's suggestions and use the cous cous you already have to make a sort of greek medley.

Roast some veggie skewers and halloumi, serve on cous cous, dollop of home made halloumi on the side and some home marinated olives.

Can give you full details if you like the sound of any of these.

Thought of you last night as I made a meal of roasted veggies in pesto with pasta. So easy! Try it -

1 sweet potato
half butternut squash
whole baby plum tomatoes
1 courgette
1 red onion
Cube the veg into chunky, bite sized pieces (you do do whatever veg you fancy to be honest). Put into oven dish with olive oil and some dried oregano and basil. Roast in oven for about 20 mins at 200c.
Meanwhile boil some pasta (I like wholewheat fusilli with this dish) and drain when cooked.
Put pasta back into pan and stir in the roasted veggies and a jar of pesto.
Serve in big bowls with some shavings of fresh parmesan and some chopped fresh basil.

Easy peasy, very yummy and very healthy!

oh that sounds really nice!!!!!!

i cooked my meal and i have piccies which my mum took as she was so shocked and happy i cooked!!!

it was farr too much but omg the feta cheesee yummmy!!!!

Halloumi is amazin, I just totally love it !! Cant wait to go to Cyprus, Halloumi with every meal.... il be fat when i get home!!!
