I want to make a Carbonara sauce for T - help needed please

My OH and son love pasta and so do I. They love Spag Bol but I am tired of it now. So I am going to make Spag bol for them this evening, but would like to make a carbonara sauce for me - but I do not have a clue.
Any good, simple and quick recipes please.

hello, If you want to keep it simple, then some fried onions, bacon bits, and peas. then just whack a tub of mascarpone cheese and a lovely big handful of parmesan in the pan for a few minutes,

I could also give you the proper recipe with egg etc ??

grate some parmesan cheese. then mix egg yolks and cream and add the cheese to the mixture. cook the pasta and when ready stir the mixture through the pasta. the heat of the pasta will cook the sauce. No need to put back on the heat....voila!

Wow you two - that was quick. Both sound yummy and I am definitely going to cook myself that. Whats the betting that OH and son will want in on my party!!!

Rach - can I put mushrooms and perhaps some ham in that recipe of yours too? I am getting a bit greedy now !!

yes, just remeber they will need to be pan fried so you just add them to the pata and sauce when it is ready. We pan fry the extras and serve them in small dishes as sprinkles.Then people can add what they fancy! Ham and mushrooms are good!

Mm Mm - sounds lovely. And of course they will be MY sprinkles - even better !!!

My Oh uses only the egg yolks....but some people use all the egg.
