Well I can totally understand that! Some people just don't the shades grey, it has to be in black and white!!!

Linda, what about using Fructose? It's a natural sugar that's found in fruit etc.

At least it would be better than using refined sugar.

That sounds like a good idea Corrie.

I did actually have some success on Saturday. I made a carrot cake completely sugar free. I added raisins and drained crushed pineapple and replaced a third of the oil with sugar-free apple sauce. It was actually rather nice .

I filled it with whipped cream mixed with crushed strawberries and on the top I did cream cheese/vanilla/cinnamon mixed with the strawberries and cream and stuck strawberries on top.

Even my brother liked it. YAY!

My friend gave me this recipe at the weekend. I have not made it myself yet but have tasted the one she made and it was very nice.
Sugarless fruit cake



Ingredients;

200g (8oz) sultanas

250ml (1/2pint) non-sweetened orange juice

75g (3oz) low fat margarine

200g (8oz) wholemeal self raising flour

25g (1oz) Jordan’s natural wheat bran

1tsp mixed spice

2 eggs



Method;

Soak sultanas in orange juice overnight

Preheat oven to 180oc/350oF/Gas mark 4

Grease and line with greaseproof paper a 15cm/6ins round tin

Mix flour, Jordan’s wheat bran and spice

Rub margarine into flour mixture until it forms crumbs

Stir in beaten eggs, fruit and orange juice

Turn mixture into tin and bake for 1.5hrs or until a skewer pushed into the centre comes out clean

Allow to cool
