Corrrrr! My dinner smells gorgeous!!!

OH has decided to eat less meat so we can eat dinners together every night. He still gets roast beef sandwiches in work though I've been working hard to make sure he doesn't regret it, and he's been making an effort too, so we've been eating some really nice stuff lately. Anyway, I have surpassed myself tonight with home-made spinach and ricotta cannelloni. Haven't tried it yet, it's bubbling away in the oven, but OMG, it smells flippin' delicious

Mmmmmmm mmmmmmmmmmm mmmmmmmmm!

It was deeeelicious Franc

Lots and lots of spinach - yummy! Although I have to say I decided the recommended topping of soured cream and mascarpone was over the top and went for a good old-fashioned (and considerably less lardy!) bechamel.

You've just given me inspiration for what to do with the bag of spinach in the fridge...was struggling to come up with something different. Think I've got some ricotta in the freezer too
