The gums are also used to check for a shock response. In a normal dog the gums will be a nice pink colour, but if the dog has been in an accident (hit by a car etc) the blood will be diverted to the internal organs to allow the body to survive. That's when the gums become pale (due to lack of blood) and also when you need to get your dog to the vet for fluids etc.
