Heres one I use

Carrot Cake

14 ounces of carrots, scrubbed
2 cups of sugar
1 1/2 cup of vegetable oil
4 large eggs
1 teaspoon of vanilla extract
2 cups of unbleached all-purpose flour
2 teaspoons of baking soda
2 teaspoons of cinnamon
1 teaspoon of salt
1/2 cup of crushed pineapple, well drained
1/4 cup of minced walnuts

Frosting;

One 8 ounce package of cream cheese, softened
1/2 cup of (1 stick) unsalted butter, softened
2 cups of confectioners sugar
1 tablespoon of vanilla extract

Fifteen minutes before baking, place rack in center of oven and preheat to 350ºF. Butter 10 inch spring-form pan. Shred carrots, should have 3 cups. Mix sugar, oil, vanilla and eggs with electric mixer until light and fluffy. Add carrots, then flour, baking soda, cinnamon and salt and mix on medium speed for 1 minute. Fold in pineapple and nuts. Transfer batter to pan and bake until toothpick inserted in center comes clean (70 minutes). Cool on wire rack. Beat cream cheese and butter until smooth. Add sugar and vanilla and mix well. Spread over cake. Garnish sides with walnuts. Refrigerate.

Moist Banana cake..another goodie

1/2 cup (110g) margarine, softened
3/4 cup (150g) sugar
2 eggs
3 bananas, medium, very ripe, pureed
1/4 cup (60g) light sour cream
1 Tbsp (30mL) rum, or 1 tsp (5mL) rum extract
1 Tbsp (15mL) vanilla extract
2 cups (240g) unbleached flour, white
1 1/2 tsp (6g) baking soda
1/2 tsp (3g) salt
1/2 tsp (1g) cinnamon
2 Tbsp (20g) powdered sugar, for sprinkling

Directions:
Preheat oven to 350°F (175°C). Spray a 9-inch (20cm) springform pan with vegetable oil spay.

Using an electric mixer, cream margarine and sugar on high speed until fluffy. Add eggs, one at a time and mix until smooth. Mix in banana puree, sour cream, rum and vanilla extract on medium speed. In a small bowl, stir flour, baking soda, salt and cinnamon together. Gradually add flour mixture to banana mixture and blend just until smooth.

Pour batter into springform pan. Bake for about 30 minutes, until lightly browned and a toothpick inserted in the center comes out clean. Do not overbake.

Let cake cool for about 10 minutes and remove sides from spring form pan. Sprinkle powered sugar over cake before serving.

my friends banana cake

ingrediants

3 medium sized eggs
170 grams self raising flour
170grams soft margerines
170grams caster sugar
3 very ripe bananas(mash them up well)
100grams walnuts


cooking instructions


preheat oven to gas mark 4
cream sugar and margerine together, gradually add the flour & mix well, add the eggs as you go along mixing, finally add the mashed up banana and walnuts
bake on gas mark 4 on middle shelf for approx 3/4 hour to an hour , check after 1/2 an hour


eat and enjoy..... its delious while still warm with a cup of coffee

Anyone know what gas mark for is converted to degrees, like Bellaluna, I don't know either. Is it 180 degrees or something?
