Walkers should honour the correct pathways.

Walkers should be aware of the dangers of certain livestock and know how to act with their dog in case of danger.

Surely if everyone works together there is a way forwad without litigation and culpability.
Couldn't agree more

Meaning lots of folks haven' a clue of how any animal can and often will react.

Good for you!

Have to ask though, why do people have to be inherently ignorant? If you don't know there are cows with calves in the field how are you supposed to be aware of the risk?

God you're just not getting it are you? If you can't see the livestock in the field (don't know about you, but here we have hills) and there's no sign to tell you otherwise, how are you supposed to be aware of the risk of being trampled by said Motherly Instinct?

Hypothetical situation.......

If you are walking on a public right-of-way, and a bull/cow(s) starts threatening the safety of you and your dog, would you have the right to shoot it...the same way a farmer can shoot your dog if it is threatening their livestock?

Like I say, purely hypothetical as I'm sure none of us walk with a gun!
