Titbits, toys and a clicker do me. Flat collar or harness for walking round boot sales or in town but usually off lead in free running areas anyway.

I teach everything 'hands free' then add the lead.

Because you don't want to be suprised! My first choice is a leather martingale since I like leather as a natural material and prefer a martingale to a flat collar or if martingales didn't exist it'd likely just be a flat leather collar.
