move over tarts & choccy.... my banoffie pie!
This is so quick to make - remember the days when you used to have to boil condensed milk for 4 hours to get it to caramelise.......... those days are gone! They now sell it already done.
So 250g digestives (choccy ones even better) crushed & mixed with 100g of melted butter.
Empty into greased tin with removable bottom.
Compact down by bashing with the end of a rolling pin or similar (in a plastic bag)
Leave to set in fridge for 10 mins.
Spread the caramel on to base followed by 3 small chopped bananas.
Top with whipped cream ( I use elmea double as it's low in fat ha ha!!)
Bash a flake to crumbs in it's wrapper & sprinkle on top
Voila.......... It's lush!!
PS you don't actually need all of the flake, you tip the rest in you mouth whilst licking cream bowl (coz lets face it you can never get all the cream out)
