Plant Based Protein Sources

I was wondering if those of you that feed a home cooked diet could lend me a helping hand.

What non-animal sources of protein do you give your dog(s)? I have just started to add lentils to Hank's diet but not sure what else I can give as a variety. I also need help to figure out how much to give him daily to ensure his diet is balanced as much as possible. I have also been giving him digestive enzymes, a food supplement, probiotics and an immune booster.

So far he is eating:
lentils
sweet potato
cucumber
carrot
peach
pear
banana
broccoli
squash
rice
spinach
raspberry
blueberry
apple

I will be adding:
zucchini
swiss chard
kale
white navy beans
yellow peas

Vegetarian protein = soya (be aware a lot of dogs are allergic to this), beans (all types) lentils (all types) and I suppose things like seitan and quorn although be aware that seitan is wheat gluten which like soya is allergenic for a lot of dogs and quorn has egg white and onion but in teeny weeny minute quantities.

There is a vegan food called ami which is fantastic, get a sample first though as it contains corn which can be allergenic but they sell it in Italian vets for allergic dogs and Penelope loved it. For a while anyway.

All whole grains which contain the entire grain kernel [the bran, germ, and endosperm] contain a certain amount of protein, ie brown/red/black/wild rice, buckwheat, barley, rye, millet, quinoa, oats etc. They have to be well cooked to enable the dog to digest them properly - I use my rice cooker, adding extra water to the normal ratio of water : grains.
