recipes for healthy cakes??

This has probably been done before........but we can do it again if so!
After reading Katies recipe for fat free bran,fruit loaf,I thought maybe we could have some similarly healthy fat free/low sugar cakes,cookies bars etc?
so that us dieters can eat treats too!

Just found this on the internet

Beth's lowfat Brownies:

2 cups flour (I use whole wheat mixed with unbleached white)
1/3 cup carob powder
2 tsp baking powder
1/3 cup honey
1/2 cup unsweetened applesauce
1 cup fruit juice
1 tsp vanilla

Mix dry ingredients. Mix wet ingredients. Add dry to wet. Mix
well and bake for 35 minutes at 350 degrees. Easy!

Icing:

8-10oz tofu (medium consistency)
2 tablespoons brandy or 3/4 tsp imitation brandy flavor
4-5 tablespoons carob powder
1/4 cup honey

Put all this stuff in a food processor or blender and blend until
smooth. It usually takes 5 minutes for the tofu to get really blended
in. When brownies are somewhat cool spread this on top, but don't
wait too long after you make the icing cause it thickens up some


I like the idea of honey instead of sugar......will try this at some point
also found this

sweet potato scones

1 medium sweet potato
350g (12oz) self-raising flour, sieved
2 teaspoons sugar
15g (1/2oz) Flora pro.activ light spread
1 tablespoon fresh chopped chives
250ml (9fl oz) Flora pro.activ semi-skimmed milk drink

Preparation details
1. Place potato on baking tray, pierce with a fork and bake at 190C, 375F, Gas 5 for 45 minutes or until tender. Cool to room temperature.
2. Peel and mash potato.
3. Place flour and sugar into a bowl and rub in Flora pro.activ light spread.
4. Stir in chives, potato and enough Flora pro.activ semi-skimmed milk drink to mix to a soft dough. Turn dough onto a lightly floured surface and knead gently until smooth.
5. Roll lightly to 2cm thick and cut into 5cm (2 inch) rounds. Place on greased baking tray and brush tops with a little Flora pro.activ semi-skimmed milk drink.
6. Bake in hot oven at 210C, 425F, Gas 7 for 15 minutes or until cooked
