Omelette

Can someone please tell me how to make a decent omlette please!

Do I put the filling in the pan before the egg?
How do you get the middle to cook?

Mine always end up looking like scrambled eggs
I really want one for tea!

Whisk eggs
Pour into hot pan
Muddle around with a fork gently
Add filling
Pop under hot grill
Fold
Serve

depends on the filling...like mushrooms i would cook prior to adding the eggs.

I dont have a grill but i find that if cooking on a gas ring then keeping the heat low and moving the centre of the pan to the outer edge of the actual gas flame can cook the middle quicker.....that way the edge isnt overcooked by time the middle is cooked.

Use a low sided pan and a flat straight spatula or wooden thing....and use a little oil/marg/butter even if non stick pan....

I just add the filling to the beaten eggs and pour into a hot pan that has had a little butter melted into it, when the edges start to cook loosen up with a spatula, swirl around pan, when middle starts to cook a bit i fold it in the pan and leave for a little while to cook through. Depends how you like it - i don't like it sloppy inside !

Hi Hevvur you need to get the pan hot before adding the beaten egg,
once the pan is hot take off the heat,
quickly add a tiny pat of butter, swirl it around to coat the pan,
now back on the heat and add the beaten eggs,
don't touch the eggs until they start to solidify,
gently pull the sides of the omelet inward and tip the pan to allow the uncooked egg onto pan base,
when all the egg is almost firm add the filling which should be cooked first if it is something you would normally cook like mushrooms or smoked haddock but cheese/cooked ham etc can go straight in.
Now tilt the pan and fold the omelet over and it will go on cooking sufficiently to finish off the eggs.
Now a quick tip out on to a warm plate and you have the perfect omelet

The best omelette is:

Whisk up three eggs, NO milk, and put in a very hot pan with olive oil. Keep pulling back one side, until it's ALMOST cooked, but don't have the heat quite so high for that bit, then throw on a couple of cheese slices, some cooked sliced mushrooms and chuck it under a HIGH grill still in the pan, and it will rise up and cook on the top half, then fold it over in half and it'll be fab! Mmmmmmmmm my favourite!
