Coconut Balls

Was feeling adventurous and made some chocolate coconut balls

I used:
  • 1 packet of almonds (baked first, gas mark 4 for 10/15 mins)
  • 4 largish dates
  • Half a coconut
  • Some coconut oil (to bind it all together)
  • Green & Black cocoa powder (unsweetened)



I didn't do them right tho, was supposed to shred the coconut but I just used the normal chop tool (was being lazy!)

I also have enough for two jars of the mixture



Even tho there's only 4 dates in there it's pretty sweet so the jars will probably last me ages (not overly keen on stuff that's sweet these days).

I am a bit put off as I really don't like the taste of dates in any way shape or form... sorry!

Have you ever had coconut cakes... Bolinho de Coco to give them their Goan name. I didn't have these in Goa (did have a lot of regional dishes though) but was given a book on Goan cuisine when I got back. I have really enjoyed making the recipes from the book over the years and the coconut cakes were especially good.

Funny thing, some years afterwards I was taken to an Asian multi-cultural restaurant in Orlando Florida, and they served what I would swear were the same coconut cakes as a dessert.

Happy to share recipe if you like? They are very light and you may need a spice grinder to get the right consistency of the dessicated coconut unless you can buy it fine (I used to be able to buy it ready fine-ground in London and Portsmouth).

Thanks Sue. I have never heard of those before what's in them?

I think you can use honey instead of dates in that recipe - tho tbh, I can't even taste the dates.

They should have looked like this

Quick reply Azz, mum's ancient computer letting me down again, but the Goan coconut cakes aren't vegan, they include egg white - don't know if that's an issue or not

Yeah I'm ok with egg whites currently. Although I am changing diets to something else soon (I just love trying different (science-based ish) diets to see how they differ lol)

Yummy

I make similar things but sometimes add other nuts like macadamias or cashews; but my fave is when I put a splash of rum in too

Thanks to your recommendation of Gimp, I can now do everything I used to do in Potatoshop!
