New type of cheese sauce!

I am always trying new ways to make quick meals at little cost and also trying to empty out the larder prior to moving. Last night I had a cauliflower, so decided that cauliflower cheese would do as a meal. However, I get bored with the normal cheese-sauce-over boiled cauliflower theme so I had a poke around the cupboard.
I put a lump of butter into a pan on a high heat, set the cauli to boil merrily beside it. When the butter was melted, I stirred in two sachets of soup powder - one potato & leek, the other tomato - until it was a paste, then gradually added milk, stirring all the time, turned the heat down, once I had about enough milk in and it was sauce consistency, I threw in some strong cheese until it melted and became incorporated into the goo.
Poured over the cauliflower.
Delicious!

Sounds wonderdful - I always put some marmite in my cheese sauce which brings out the cheese flavour even more

Hmmmm Marmite..... love it ...... must remember that one!
The "logic" behind making a sauce with soup powder was that (a) it produces a thickened liquid so if you use less liquid to make it you must end up with a sauce and (b) veggie flavours are bound to go with cheese. Tomato in particular! Soups also have a high salt content so make it tastier anyway!
