Beef Curry (nice and hot!!)
Ok this is my Saturday night special curry my hubby loves it and it's the total cheats way cos I use frozen veg lol it's really easy and he thinks I've been slaving away in the kitchen for hours
1 medium onion
400g diced beef
3 bird eye chillies (chopped)
3 chilli peppers red or green (chopped)
four medium sized potatoes (cut to bite sized pieces and softened)
mushrooms cauliflower brussel sprouts (whichever is available or a bit of all
)
1 tin chopped tomatoes
2 tsp chilli powder
1 tsp coriander
1 tsp cumin
1 tsp turmeric
1 tsp garlic powder
1/2 tsp ginger
1/2 tsp ground cardmoms
salt & black pepper to your own taste
mix beef with the spices in a seperate bowl
fry up the onion in a little oil till soft
add beef to pan and brown gently
sling all veg into large casserole dish
add contents of frying pan
add tinned tomatoes
add a little water
cover and shove in oven at 190c for 1 1/2 - 2 hrs
serve with rice (I usually do the rice with a touch of turmeric to make it go yellow and look fancy
)
Naan bread
you could sprinkle fresh chopped coriander on each serving for a nice touch
