Chips - homecooked

Okay what do you all use to cook your homecooked chips in oil or what?
And your potato of choice?

King Edwards and I make oven chips I don't cook them in a pan of oil

I don't really have home cooked chips...only time is boxing day and my mm cheats and buys oven chips...she does pop them in a deep fat frier though

We only get Desree potatoes over her and I normally cook them in sunflower oil. I've just bought a really dinky deep fryer which holds enough chips for one.

My mother who was a Yorkshire woman always used lard to cook chips. Absolutely delicious!

I don't know why I don't because every year I'm given around 2 kgs of home rendered lard from our village pig farm which I mainly use for making the pastry for steak and kidney pie or homemade pork pies!

Chips cooked in lard are the best, but it's years since I had them.

Moved on to sunflower oil and they were good too.

Hubby got diabetes so we cut way down on the fat so now we have one of those fatless fryer malarkies and our chips now taste a little like baked potatoes but we still like 'em

Goose fat is the ultimate!

Not absolutely healthy but once in a while....

In Hungary we can buy goose fat at most supermarkets as well as lard and duck fat. You can also by fresh pork rind and the fatty bits to make your own crackling or lard.

At the moment the butchery counters are full of ready to cook geese for Christmas.

Not a turkey in sight!

OOO goose!!! Give me a good goose over turkey any day!! I am a firm believer in animal fat being good, carbohydrate bad. I lost 20 kilos cutting out carbohydrate from my diet. I don't eat chips, but if I did I would want them cooked in full fat lard any day over oil ... unless olive, and I'm not sure that would work very well. Goose fat - even better!!

I don't eat or cook chips, as a kid we cooked them in lard but tbh I can't stand the smell and the amount of grease a deep fat fryer puts in the air in the kitchen, binned mine about 10 years ago.

I don't often have chips but when I do I use sunflower oil. Nothing quite like chippy chips from the fish & chip shop though.
