Italian meatballs

350g (12oz) lean lamb mince
25g (1oz) fresh breadcrumbs
1 finely chopped onion
1 garlic clove, crushed
1 tsp dried oregano
1 tsp dried basil
1 egg, beaten
Can of chopped tomatoes
300ml (1/2 pint) tomato juice
1 lamb or beef stock cube
salt and pepper

Put mince, breadcrumbs, onion, garlic, dried herbs, egg and seasoning in a bowl and mix together thoroughly. Shape into 16 small balls.

Heat a little oil in a non stick frying pan and seal the meatballs on all sides. Add the chopped tomatoes, tomato juice and crumble up the stock cube.

Bring to the boil and then cover. Reduce the heat and simmer for about 30 mins.

This dish can be frozen
