Well, mashed with gravy was quite good.. Jut checked the nutritional values and look at that! They are easy enough to cook and easy to eat. Maybe even with custard?

Well, many months on and sweet potatoes continue to be eaten here when they come on special. Easy soup/stew... one large sweet potato, simply chopped; the peel will come off after cooking.. an onion, chicken leg, an apple, carrot and cover with water and simmer for hours.. I use the range in winter so that is ideal...then remove peel, mash.... the sweet potato thickens the stew.. was going to add thyme but could not find the plant and remembered I sold it in summer! I add only salt to soups etc anyway. This is a sturdy winter meal..
